Ingredients

  • 3 apples (e.g., Braeburn)
  • 4 eggs
  • 120 g coconut blossom sugar
  • 200 g soft butter
  • 1 tsp organic lemon zest
  • 150 g Greek yogurt (10% fat)
  • 200 g spelt whole‑grain flour
  • 1 tsp Baking powder
  • a pinch salt

Instructions

    Peel, quarter, core the apples and dice or cut into strips as desired. Separate the eggs. Whisk the yolks with coconut blossom sugar using an electric hand mixer until fluffy. Fold in butter, then lemon zest and yogurt.

    Sift the flour with baking powder. Beat the egg whites with salt to stiff peaks. Alternately fold in the flour and beaten whites into the yolk mixture. Spread the batter in a springform pan lined with parchment paper, top with apples.

    Bake the cake in a preheated oven at 180 °C (fan‑forced 160 °C; gas: level 2–3) for about 40 minutes (test with a skewer). Let cool, carefully remove from the pan and allow to cool completely on a wire rack.
