Apple Cake in French Style

Ingredients
- 280 g spelt whole‑grain flour
- 80 g coconut sugar
- 1 pinch salt
- 1 egg
- 210 g butter
- 5 apples
- 200 g apple sauce

Mix the flour with 60 g coconut sugar and salt, sift onto a floured work surface, make a well in the center, crack the egg into it and scatter butter pieces around the well.

Using a dough scraper, crumble all ingredients from outside to inside and quickly knead by hand into a smooth dough. Shape into a ball, wrap in cling film and refrigerate for 30 minutes.

Roll out the dough on a floured surface to the size of the baking pan and line the pan with it, forming a small edge.

Peel, quarter, core and slice the apples thinly. Arrange them like roof tiles on the dough base, top with butter pieces, sprinkle with remaining coconut sugar and bake in a preheated oven at 180 °C (fan: 180 °C; gas: level 3) for 25–30 minutes.

Warm the apple sauce slightly.

Remove the finished cake from the oven, spread the apple sauce over it and let it cool to lukewarm.

Serve cut into pieces with whipped cream or crème fraîche as desired.
