The Anzac Biscuits from Spoonsparrow bring a touch of Australia to the plate.

Ingredients

  • 100 g rolled oats
  • 100 g shredded coconut
  • 120 g spelt flour type 1050
  • 75 g raw cane sugar
  • 120 g butter
  • 4 tbsp Maple syrup
  • 1 tsp Baking Soda
  • 100 g dark chocolate (at least 70% cocoa)

    Mix rolled oats, shredded coconut, flour and sugar in a bowl. Melt butter with 2 tbsp maple syrup, baking soda and 2–3 tbsp water over low heat. Pour the wet mixture into the dry ingredients and combine until a pliable dough forms; add more water or flour if needed.

    Scoop small portions of dough with a spoon, shape into balls and gently flatten them. Place spaced on a parchment-lined baking sheet. Bake in a preheated oven at 180 °C (160 °C fan) for about 20 minutes until golden brown. Remove carefully and cool completely on a wire rack.
