Ingredients

  • 80 g amaranth
  • Salt
  • pepper (from grinder)
  • 2 Tomatoes
  • 1 Red Onion
  • 1 red chili pepper
  • 1 bunch parsley
  • 1 tbsp sprouting oil
  • 1 tsp sea buckthorn juice
  • 2 tbsp lemon juice

Instructions

    Wash the amaranth in a sieve under running water and let it soak in lightly boiling salted water for about 15 minutes. Drain, rinse with cold water and drain well.

    Wash the tomatoes and dice them into small cubes. Peel the onion and slice into rings. Finely chop the chili pepper.

    Finely chop the parsley. Whisk together the oil, sea buckthorn juice and lemon juice. Season with salt and pepper. Mix the amaranth with the prepared ingredients and dressing and let it rest for about 30 minutes. Arrange in bowls and serve.
