Ingredients

  • 200 g fruit flesh (from Aloe Vera leaf)
  • 1 Carrot
  • 1 tsp Honey
  • 2 tbsp Lime juice
  • 2 tbsp olive oil
  • 150 g sugar snap peas
  • 2 tbsp goji berries

Instructions

    Peel the carrot, slice lengthwise into thin strips and then cut into diamonds.

    Wash the sugar snap peas, trim them and cut into diagonal pieces.

  3. 3.

    Blanch the carrots in boiling salted water for about 1-2 minutes. Shock in ice water and drain.

  4. 4.

    Cut the Aloe Vera into cubes and arrange on plates with carrots and sugar snap peas. Sprinkle goji berries over the top.

    Whisk oil with honey and lime juice and drizzle over the salad.
