Almond Cheese Cake with Cherries

Ingredients

  • 300 g flour
  • 30 g fresh yeast
  • 60 g sugar
  • 100 ml lukewarm milk
  • 1 egg
  • 75 g baking margarine
  • 1 pinch salt
  • 1 tsp orange zest
  • flour for dusting
  • 300 g almond flakes
  • 300 g sugar
  • 400 g whipping cream
  • 100 g cherry topping
  • 1 kg low-fat quark
  • 500 g mascarpone
  • 300 g sugar
  • 5 eggs
  • 2 packets vanilla pudding powder (for cooking/baking)

Instructions

    Combine all dough ingredients in a bowl and knead with the hand mixer attachments until smooth. Cover and let rise in a warm place for about 50 minutes, until doubled in volume.

    For the topping, combine sugar, almonds and cream in a pot and simmer for about 10 minutes. Remove from heat, chop cherries and fold them in.

    In a bowl whisk all cream ingredients together until smooth. Roll out dough on floured surface to sheet size and place on a parchment-lined (or greased) baking tray. Spread the quark mixture over the dough, then distribute the almond mixture on top. Bake in preheated oven at 175 °C for about 70 minutes, covering with foil if necessary. Cool and cut into pieces to serve with coffee.
